Knowledge Share Description
Nuts and seeds have been cherished parts of human's (and animal's!) diets for millennia, providing a great amount of nutrition and sustenance, but also a decadent treat. Nut butters and seed butters are the natural next step- humans have been grinding many of their products into pastes for about as long as we have been cooking. So it is no surprise that in the past couple decades, there has been a big craze, especially in the West and in the United States, around nut and seed butters, especially gourmet and exciting kinds! However, long before this craze, nut and seed butters have actually been staples in diets around the world! From peanut butter ground by Native MesoAmericans, to the walnut, almond, hazelnut, and sesame spreads of the Mediterranean, to the many many iterations of other nut pastes globally, these delicious butters have a rich history. In this knowledge share, you can join Ava, owner and chef at Fog City Sundries, in exploring the history and origin of nuts and seeds, their resulting pastes, and more importantly, how to prepare exciting types of nut and seed butters that are not only very healthful but bursting with flavor.

How to Make Nut Butter (Actual Process): 1 Creamy Nut Butter /1 Crunchy Nut Butter/1 Seed Butter (these take about 10 minutes each)
Troubleshooting- texture, roasting, flavor fixes Ex: What do I do if my butter is turning out lumpy? What do I do if some of my nuts got burnt? How do I make my butter sweet without adding too much refined sugars? How can I store my butters for maximum freshness? How do I know how long to roast them for?

Facilitator
Ava Zarich is a community health educator, gardener, herbalist, and chef. She is influenced by her MPH (Master in Public Health) in Community Health Education, by generations of folk medicine and sustainable agriculture in her Istrian-Croatian family, and by the progressive yet culturally inclusive approaches towards health in her hometown of San Francisco and her longtime home of New York. Her work centers around Balkan Folk Spirituality and Medicine, Cultural Humility and Interconnectedness, Popular Education, Asset Building, and Food/Land/Community Sovereignty. She believes that bringing pathways to health to individuals and their communities is a potent form of resistance and one small step of many needed to heal our planet. Most importantly, she believes all individuals deserve the right to enjoy their lives, the delicious food and healing plants we’ve been blessed with, and the healing benefits of food cooked with culture, curiosity, and love
